Because the backwards-double-attack 33. ... Qc8! hits both the rook and the undefended rook pawn. If white saves his rook somehow, Black just plays Qxh3+ followed by Rg5+ and white resigns.

If white instead guards the loose h-pawn, then Black just takes the white rook and has an easy endgame win an exchange up.

Thus, Black's only hope for survival after 33. ... Qc8! is to play Rxg7+ followed by protecting the h-pawn and try to hang on with B+P vs. R. However, I think white's king is at that point too exposed, and white may not even survive to the endgame.

THAT's why not 33. gxh3.

The rook move neutralizes the e5 rook and Black only has a few checks before he is driven back

34...Qxh3 35 Kg1 Qg4+ 36 Kf1 Qd1+ 37 Kg2 Qg4+ 38 Qg3

33 gxh3 is winning I think.
