Eric Schiller calls 1.e4 e5 2.d3?! the "Clam" opening, saying <I've played it a bit, sometimes against the Alekhine 1.e4 Nf6 2.d3 e5 3.f4.>

There's also the Woodchuck defense: Black pops his knight out, digs a second hole and then jumps back through the hole: 1.d4 Nc6 2.c4 a6?! 3.d5 Na7.

I think Schiller named a variation of the Rat defense the "Pterodactyl". That one should count double.

The Fried Fox: 1.f3/2.Kf2 (or with colors reversed). There's an NM on chess.com who created an account on which he only plays that opening. It's quite annoying.
