Tarrasch himself gives no forename, simply calling him <Herr Vogel>.

Reinfeld ('Tarrasch’s Best Games of Chess') and Chernev ('The Most Instructive Games of Chess Ever Played') call him <S. Vogel>.

There was a chesplayer named <J. Vogel> at that time in Nuremberg, later expanded to <Johann Vogel> after his death in WWI ('Deutsches Wochenschach', 'Deutsche Schachzeitung' and 'Schachjahrbuch für 1914. II Teil') while 'Wiener Schachzeitung' deviates with <Hans Vogel> (see also my post above).

So it was most likely <Johann Vogel> as both <Johann> and <Hans> are short for <Johannes>, though names in their own right.
