Why was Rookie so reticent to play e5?

Why not 26. Nxc3?

Why was Junior so eager to take away the bishop pair that it allowed such a comical exchange sac ?

  HeMateMe: After 26. Nxc6 black might play 26...Q-d4-f4. White has too many holes in his kingside to defend the ensuing attack.

nice positional sac. The White Bishop at g4 is dead weight, while black's Bishops and center pawns rule.
