  offramp: I've been on the knight side of one of these, and I drew it. It helps that Black's ♔<♘ + ♖ can create mating threats. Also the knight need only be given up for 2 pawns if White's remaining pawns are both rook's pawns.

  offramp: Unfortunately for Black I don't think he can keep the rooks on. 48. Rb5 would seem to force an exchange.

If the rooks come off then I think the black K and h-pawn will try to keep the kingside under control while the knight tries to win some pawns on the queenside.

  offramp: Black might give up the b4 pawn to keep rooks on, by say 48. Rb5 Ra8. He might then try to create mating/perpetual check threats around the white king. He would need his rook on the first rank and his king in the centre squares - then put the knight in wherever it will go!

It is not easy.

Fwiw, 36-ply SF7 gives 0.00. Not sure you can trust an engine in this type of position though.
