No reason, though 14....Nxd4 is also strong. After 14....Qxd4 15.Qxd4 Nxd4 16.Bxc7 White has chances to draw.

The engine's favorite is 14....Nxb4! (15.Qxb4 Qxd4 with ...Bxc5 coming up is winning).

Just a horrible opening by Lasker. This is the only tournament I know of that provides some support for the idea that the secret of Lasker's success was swindling his opponents.

Telemus: The engine prefers 14.. ♘xb4, but that is engine stuff.

Tarrasch called 14.. ♕xd4 stronger and simpler than 14.. ♘xd4. He mentioned that after 14.. ♕xd4 15.♕xd4 ♘xd4 16. ♗xc7 bxc5 17.bxc5 ♗xc5 Black is a pawn up and far ahead in developement.

No doubt he's right and probably the old Schallop would at least not have lost this position.

I would call it Janowski stuff myself.

Old Schallopp may have been more concerned about failing to win from such a superior position. Not winning seems like a distinct risk of Tarrasch’s line, which is probably why Schallopp preferred 14....Nxd4. He was all too willing to mix it up with his superiors. Janowski vs E Schallopp, 1896

Of course Schallopp wound up losing instead. I’m guessing he didn’t see Lasker’s 21st move when he needed to. The (relatively) weak player is always unlucky.
